The ingredients needed to make Thai Green Vegetable Soup:
  1. Get 2 cups cubed vegetables (broad beans, bottle gourd, green papaya, french beans, carrots, radish & onion)

  4. Prepare 1" galangal, sliced
  5. Take 1 fresh chilli, slit
  6. Get 2 tbsp. Thai green curry paste (store bought)
  7. Prepare 3 cups vegetable stock / water
  8. Get 8-10 kaffir lime leaves
  9. Prepare 1 lemongrass stalk, cut into 3 pieces
  10. Get 1/2 cup thick coconut milk
  11. Prepare to taste salt
  12. Prepare 1/2 pepper powder or to taste
  13. Prepare as required coriander leaves, lime leaves & fresh chilies to garnish

When cool, discard the galangal, lemongrass and lime leaves. Just before serving, add the coconut milk and heat. Stir through the curry and lemongrass pastes, and half the chilli. Pour over the stock and coconut milk, and bring to the boil.

Steps to make Thai Green Vegetable Soup:
  1. Heat oil in a pan and saute the Thai green curry paste on a low flame for a few seconds. Add all the chopped vegetables, lime leaves, lemon grass, galangal, green peas, fresh chilli, stock, salt and pepper powder.
  2. Pressure cook for 1 whistle. When cool, discard the galangal, lemongrass and lime leaves.
  3. Just before serving, add the coconut milk and heat through and serve in individual soup bowls, garnished with chopped coriander leaves, lime leaves and fresh chilies.

Stir through the curry and lemongrass pastes, and half the chilli. Pour over the stock and coconut milk, and bring to the boil. This healthy soup is packed with veg - courgettes, sweet potatoes, spinach and peppers are cooked in a fragrant broth for an easy vegetarian dinner idea. Heat the oil in a large flameproof casserole dish with a tight-fitting lid. You've probably guessed it, but this soup is chock full of spicy Thai green curry paste.
