Cover the skillet with a lid and allow kale to cook a few additional minutes. Season with a bit more salt and drizzle with a bit extra virgin olive oil and serve immediately.
Give a stir and cover with a lid. Cover carrots and kabocha halves in olive oil. Place kabocha skin side down on a baking sheet covered with parchment paper. Place the cubed kabocha, apples, broth, dates, turmeric, ginger, salt, cinnamon, and pepper in a large food processor and stir until combined. In a mortar and pestle (or spice grinder of some sort) place the cumin, fennel and coriander seeds, the ginger, turmeric, cinnamon and kashmiri pepper.
