Combine egg mixture and flour mixture; mix just until moistened. Fold in carrots and drained raisins. In a large bowl whisk together flour, baking soda, cinnamon, and salt. Whisk sugar, oil, and eggs in a separate bowl.

  1. Line cupcake tray with cupcake paper holders
  2. Sift flours, baking powder and baking soda and cinammon, set aside.
  3. In a medium bowl, whisk together eggs, Egg whites, vegetable oil and vanilla. Stir in carrots and raisins
  4. Spoon the batter into prepared baking tray, filling them up-to 3/4 full.
  5. In Separate bowl combine desired topping. Here I used oats, poppy seeds and sunflower seeds: sprinkle over muffin tops.
  6. Bake at 180 degrees for 20 minutes or until the tops are golden and spring back when lightly pressed.
  7. Serve with masala Chai.
